Free Easy Cupcake Recipe for Dog


I just found this on a site and I haven't really tried it yet but it sounds good for a dog. I really forgot where I got it though.

Liver cake


(from an old newsletter of the Cocker Spaniel Club of South Australia)
Ingredients
~500 gms liver (pureed or chopped very fine)
~1 cup flour
~1 cup corn (maize) meal
~garlic chopped or powdered (optional)
Method
~Mix together to form a batter. Spread on a greased sheet or cake pan. Bake at 180 degC for approx 20 mins or until brown. Cut into squares. Can be frozen

Easy Almond Cupcake Recipe


Almond Joys

Ingredients


1 1/2 cups all-purpose flour
1 cup white sugar
2 teaspoons almond extract
2 eggs
1/4 cup sliced almonds



Method:


Preheat oven to 350 degrees F ( 175 degrees C ).
In a medium bowl, stir together the flour and sugar, add almond extract and eggs; mix until well combined. Roll dough into 1 inch balls, place on a cookie sheet, and place an almond slice on to top of each one. Bake for 8 to 10 minutes, until golden brown.

Easy Cupcake Recipe - Dark Chocolate


Dark Chocolate Cupcakes


8 T unsalted butter, cut into 4 pieces
2 oz. bittersweet chocolate, chopped
1/2 C Dutch-processed cocoa
3/4 C unbleached all-purpose flour
1/2 t baking soda
3/4 t baking powder
2 large eggs
3/4 C sugar
1 t vanilla extract
1/2 t table salt
1/2 C sour cream

Adjust oven rack to lower-middle position, pre-heat oven to 350 degrees. Line muffin pan with baking cup liners.

Combine first three ingredients in medium heatproof bowl. Melt ingredients using a double-boiler or a saucepan over simmering water. Whisk until smooth and combined. Set aside to cool, until just warm to the touch.

Whisk flour, baking soda and baking powder in small bowl to combine.

Whisk eggs in medium bowl to combine; add sugar, vanilla, and salt and wisk until fully incorporated. Add cooled chocolate mixture; whisk until fully combined. Alternate about 1/3 of flour mixture with the sour cream into chocolate mixture and whisk until combined. End with remaining flour mixture and whisk until batter is homogenous and thick.

Divide batter among muffin pan cups. Bake until toothpick comes out clean, 18-20 minutes.

Cool in pan on wire rack, about 15 minutes. Cool to room temperature before icing, about 30 minutes.

Cake Help


Hello. I have some cake questions, and am hopinhg that you pro's out there, or anyone who has experience can help me. Thank you in advance.

This is what I am thinking for the cake that I am preparing. Anything can be changed if needed:

-the cake will be 3 tiers
-it will be a STACKED CAKE, so there won't be pillars!!!!!!!!
-each tier will be 2 layers (is this large enough?)
-the cake will be covered in Marshmallow Fondant (a must!)
-the pan sizes are a 12in round, 9in round, and 6in rounds (pans already purchased--cannot change)
-I'm not sure of how to decorate--was thinking to have large fondant bow on top tier, polka dots on that tier or another tier, and stripes on one tier (iff-ey???)
-I am using (and must use) cake mix from the box 

Now for my questions:
is there anything I need to do inbetween layers or tiers (other then frost between layers)?

do I need cake boards/dowels for in between tiers, even though I'm not doing dowels or lifting the tiers?

How far ahead can I make the marshmallow fondant before I plan to put it on the cake? Days? A week? How long???

How do I make a large fondant bow? Do you have pictures to reference?

Is there anything special I should do to the cakes to make it so they won’t collapse from the weight of themselves and the fondant?

Your cake sounds like a wedding cake? Between the layers you should use a filling such as lemon or pineapple. . It gives the cake a really fresh taste. Yes, you need boards and dowels between the different sized cakes or they tilt or have other problems. Your fondant would go on each sized cake separately.
You can go so far as to make the cake and the fondant and freeze it until you are ready to put the cakes together and decorate. That also lets you rest up a bit before the hard work of setting the dowels.
The dowels and boards will keep the cake from collapsing. you will be able to set each cake off the others, or slice them separtely especially if the top tier is to be saved. Since you are using box cake mix, doctor it up just a little if you are using a white cake mix, by using 1/2 each almond and vanilla extract instead of just vanilla. Also, while each layer is still warm, you should cover it with a thin layer of butter cream frosting, This keeps crumbs out of the way when you are patting on your fondant. I personally have never made a fondant frosting but I have watched them being done. I learned cake decorating from a wilton book I got from the library. I bet they have a site online now. You could ask them how to make a fondant Bow. It would also depend on the size of the bow and how you want it placed. Good Luck

I make cakes in the microwave

How I do it is:

4oz (113g) flour

4oz (113g) marg

4oz (113g) sugar

2 medium size eggs

Whisk everything together in a bowl until mixture turns white (then you know it has loads of air in it). Turn into a dish and cook on med. for 3 mins, then add extra 1 min check if its not cooked add another min, It should look cooked on the top but slightly less cooked on the sides

Cake Baking Tips


How to Prevent Cake Falling?


Under mixing and too violent mixing are the most common causes of cake failure, you have to mix with a SPOON for a long time or with a stand mixers PADDLE (no whisk) on LOW speed for a long while.

Cake flour is very very low in gluten, and so you need to mix GENTLY for an extended period (whisks and electric beaters tear the gluten structure down as fast as the create it, they will not work well) to create a gluten structure that will set and contain the carbon dioxide that your leavener creates. and because there is little gluten any violent action will collapse the whole thing.

You can make it less tempermental by substituting 1/2 all purpose flour for 1/2 of the cake flour. but your cake will not be as delicate and tender.

Flouerless Cake Recipe


1 cup sliced or slivered almonds, toasted*
1 cup plus 1 tablespoon sugar, divided
3/4 cup (1-1/2 sticks) butter or margarine
1/2 cup HERSHEY'S Cocoa
5 eggs, separated
1/8 teaspoon salt
Additional sliced almonds
Apple slices
Honey
Directions:
1. Heat oven to 375°F. Grease bottom of 10-inch tube pan.

2. Place cooled almonds in bowl of food processor with 1 tablespoon sugar; process until finely ground. Melt butter; stir in cocoa. Cool.

3. Beat egg yolks with 3/4 cup sugar in large bowl until pale yellow in color. Add cocoa mixture and salt; mix well. Stir in almonds.

4. Beat egg whites until foamy. Gradually add remaining 1/4 cup sugar, beating until stiff but not dry. Add about 1/4 beaten egg whites to chocolate mixture; stir until well blended. Gradually fold remaining egg whites into chocolate. Pour into prepared pan.

5. Bake 40 to 45 minutes or until set. Cool 10 minutes in pan on wire rack. Unmold and remove bottom. Cool completely. Just before serving, decorate with apple slices and almonds; drizzle with honey, allowing to drip down sides. Cover until ready to serve. 12 servings.

* To toast almonds: Heat oven to 350°F. Place almonds in single layer on shallow baking pan. Bake 7 or 8 minutes, stirring occasionally, until light brown. Cool completely.

Difference Between Maffins and Cupcakes


The difference is in a method that they are made:


"Muffin" refers to the way by which this "quick bread" is prepared.

muffin method: 1) cut fat into flour-mix; 2) combine all wet ingredients; 3)add wet ingredients (which usually includes eggs and milk) to the dry and stir ever so gently to produce a very lumpy batter. Do NOT over mix the batter, for this make the muffins tougher and shorter. 4) usually bake at a higher temperature (350-400), and are much better while hot.

Cupcakes: 1) cream butter, eggs, sugar, and flavoring with a mixer going at high speed; 2) combine dry ingredients and gradually add to the wet-mix; 3) turn mixer on higher speed and beat for about 2-3 minutes to produce a smooth batter and to get a lot of air in there to enhance the rise; 4) usually baked at a lower temp (about 350) for a lil longer than muffins. 5) are good when hot, but don't frost until cold.

How to Keep Cupcakes Fresh or a Longer Time


Some tips:


If you put them in air tight container they are good for at least a week. I would frost them the day before and refrigerate again to harden the frosting. Do your cheese cake when you have time only for it. it is a much lengthlyer receipe and you want to just consintrate on it. You can also make your frosting a head of time and let it set to room temperature before using, it will harden again in the frig after your done.

English Fruit Wedding Cake Recipe


English Fruit Cake

1 lb. butter
2 tablespoons milk
1 lb. light brown sugar
3 lbs. currants
9 eggs
2 lbs. raisins, seeded and finely chopped
1 lb. flour
2 teaspoons mace
1/2 lb. almonds, blanched and shredded
2 teaspoons cinnamon
1 teaspoon soda
1 lb. citron, thinly sliced and cut in strips

Cream the butter, add sugar gradually, and beat thoroughly. Separate yolks from whites of eggs; beat yolks until thick and lemon-colored, whites until stiff and dry, and add to first mixture. Then add milk, fruit, nuts, and flour mixed and sifted with mace, cinnamon, and soda. Put in buttered deep pans, cover with buttered paper, steam three hours, and bake one and one half hours in a slow oven, or bake four hours in a
very slow oven. Rich fruit cake is always more satisfactory when done if the cooking is accomplished by steaming.

CLASSIS TIRAMISU

Ingredients
500gr Mascarpone cheese (approx. 1 lb.)
6 pasteurized eggs
2 packages savoiardi or ladie's fingers
3 Tablespoons sugar
2 shots (2 oz) Cognac or Brandy
8 espresso sized cups of coffee (about 14 oz)
4 Tablespoons powdered unsweetened cocoa.
Method
Preliminary Steps:
Bring all ingredients to room temperature.
Make the espresso and pour it into shallow flat-bottomed bowl. Add one shot of cognac, one teaspoon cocoa, and allow to cool to room temperature.
Separate egg yolks and whites.
Mixing:
In the first mixing bowl, beat egg yolks and sugar until creamy white. Add mascarpone and 1 shot of cognac and mix until blended. Leave this mixture in the bowl.
In the second mixing bowl, beat eggs whites until fluffy. Make sure that the egg whites are at room temperature here or this will take all day.

Fold beaten egg whites into mascarpone mixture. Mix only enough to blend. Over mixing will deflate the egg whites.

Quickly dip a savoiardi in the espresso bowl. To get the right amount of espresso on the savoiardi, lay the finger flat in the bottom of the bowl sugared side UP and immediately pull it out. Place each finger flat in the bottom of the pan sugar side down. The savoiardi will quickly absorb the espresso. If you soak them the result will be soggy and horrible.


Assembly:

Build a layer of dipped savoiardi across the bottom of the pan. If some of the savoiardi does not look 'dark' from the espresso, spoon a few more drops of espresso on the savoiardi. Any espresso left in the bottom of the pan will be absorbed by the savoiardi.
Spoon a layer of egg/mascarpone mixture across the layer of savoiardi. Use about 1/2 of the mascarpone mix. The layer should be about 1cm. (3/8in.) thick.

Dip another layer of savoiardi and lay them on the mascarpone mix. Layer them as before, sugar side down.

Spoon a second layer of egg/mascarpone mixture across the second layer of savoiardi. Use the remaining mascarpone mix. The layer should be about 1cm. (3/8in.) thick.

Sift cocoa on top of the second mascarpone layer. Scoop a tablespoon of cocoa into a small sieve. Hold the sieve over the tiramisu and tap the sieve on the side with your finger. The cocoa should sprinkle down in an even layer. Use this technique to cover the tiramisu with a very thin layer of cocoa.

Refrigerate for at least 4 hours before serving. The Tiramisu will taste quite good for several days if refrigerated.

These are some nice cake decorating ideas and tips:



Between the layers you should use a filling such as lemon or pineapple. . It gives the cake a really fresh taste. Yes, you need boards and dowels between the different sized cakes or they tilt or have other problems. Your fondant would go on each sized cake separately.

You can go so far as to make the cake and the fondant and freeze it until you are ready to put the cakes together and decorate. That also lets you rest up a bit before the hard work of setting the dowels.

The dowels and boards will keep the cake from collapsing. you will be able to set each cake off the others, or slice them separtely especially if the top tier is to be saved. Since you are using box cake mix, doctor it up just a little if you are using a white cake mix, by using 1/2 each almond and vanilla extract instead of just vanilla.


Also, while each layer is still warm, you should cover it with a thin layer of butter cream frosting, This keeps crumbs out of the way when you are patting on your fondant. I personally have never made a fondant frosting but I have watched them being done. I learned cake decorating from a Wilton book I got from the library. I bet they have a site online now. You could ask them how to make a fondant Bow. It would also depend on the size of the bow and how you want it placed.

Looking for a beach theme wedding cake?

When it comes to wedding cakes, long gone are the days of following tradition. Since you are considering a beach theme wedding cake, you are obviously not a slave to those traditions. So...let's stray from the "norm" and be adventurous!

One thing to remember...there are no rules! If there are...well, rules are made to be broken. Your beach theme wedding cake can be anything you want it to be!

What Size?

How many guests are you planning to have? If you have your cake made professionally it can range in price anywhere from $2.00 to $15.00 per slice. A "slice" is normally considered to be 2 ounces or, approximately 4" x 2". The range in price will depend on how much intricate detail you want on it. If the cake you choose is very labor intensive, you can expect higher prices. If you are on a tight budget, keep it simple!

What Shape?

A beach theme wedding cake can be any size, shape or description. Be creative. If you have an idea for your cake, sketch it out on paper and take it to that talented friend, relative or your chosen bakery. If you can imagine it, someone can make it!

Do not limit your thinking to a two or three tier cake. It can be round, square, a sheet cake, a sculpted cake, individual mini cakes, cupcakes or even cookies! Some brides even choose a one or two layer, individual wedding cake on each guest table rather than the traditional large cake at the head table. This is a nice idea because it also serves as the table centerpiece. This eliminates the added expense associated with having a wedding centerpiece at each table!

A couple of things to keep in mind though...

* Since your reception may be on the beach, consider the sun! If you are having a dawn or dusk ceremony, heat from the sun will probably not be a major factor. However, if you are having your wedding midday, consider an "ornamental" cake. By that I mean, not edible with the exception of perhaps the bottom layer if you and the groom plan to cut it. You don't want your creation to melt!

* Consider draping your cake in a decorative manner with tulle to keep the bugs and sand out of it. It would be beautiful yet practical.

* Purchase decorative, individual cake boxes. Fill them and perhaps tie your wedding program or thank you to them with ribbon. Keep them in a cooler until time to pass them out to your guests. They will serve as your wedding favor, killing two birds with one stone!

* Make your own beach theme wedding cake! Look inside the next "Duncan Hines" cake mix you buy. The instruction for making baking tiered cakes are printed on the inside of the box! You can do it. If you can't, I'll bet you know a friend who could! In EVERY town there is a friend or a "friend of a friend" who makes beautiful wedding cakes. It's a hobby for them. They love doing it! Of course they still want to be paid, but not the ridiculous prices that a professional will charge you. So...go... find that friend!
