Difference Between Maffins and Cupcakes


The difference is in a method that they are made:


"Muffin" refers to the way by which this "quick bread" is prepared.

muffin method: 1) cut fat into flour-mix; 2) combine all wet ingredients; 3)add wet ingredients (which usually includes eggs and milk) to the dry and stir ever so gently to produce a very lumpy batter. Do NOT over mix the batter, for this make the muffins tougher and shorter. 4) usually bake at a higher temperature (350-400), and are much better while hot.

Cupcakes: 1) cream butter, eggs, sugar, and flavoring with a mixer going at high speed; 2) combine dry ingredients and gradually add to the wet-mix; 3) turn mixer on higher speed and beat for about 2-3 minutes to produce a smooth batter and to get a lot of air in there to enhance the rise; 4) usually baked at a lower temp (about 350) for a lil longer than muffins. 5) are good when hot, but don't frost until cold.
