Today’s wedding guests have a higher expectation concerning the taste of cakes, so you should pay particular attention to the flavor of your wedding cake.
Also brides today are generally older than those of the past and better traveled. Often they have developed more sophisticated palates from having tried many different ethnic foods. At their weddings they want personal statements about who they have become.
Do you want each layer of your wedding cake to be a different flavor or would you prefer a cake all one flavor? No flavor or filling is considered “wrong” for a present day wedding. You can delight taste buds with cheesecake, fruit cake, mousse filled cakes, or pound cake. Maybe you would prefer a standard vanilla, orange mud, chocolate, or sponge cake.

Some other choices that are becoming more popular are spice cake with caramel, hazelnut, and apricot cream with almond cake.
If you are having a hard time choosing between one flavor and another or if you want your guests to have a choice of flavors, why not choose a different flavor for each layer of your wedding cake. You may want to serve it buffet style, so that guests can have their choice of flavors.
Eclectic flavors like ginger, pistachio, and blood orange are “IN” flavors right now. They can add an exotic taste to your wedding cake.
