About Diabetic Cake



With a lot of people in my family with diabetes, it can be hard to come up with ideas for a cake that tastes good and has little or no sugar.

This can sometimes make gatherings difficult. If you look around and try different recipes, you will find one that you like. This recipe is easy but requires either a hand mixer or a stand mixer.

The prep time is only 10 minutes and cook time is 30 minutes. You can have this cake cooking while getting dinner ready and it should be cooled enough to eat after dinner.

 For the sugar substitute you can use any substitute you like. This chocolate cake only has 164.9 calories, 22.4g of carbs and a total fat of 8.8g.

This is a very good cake for someone’s birthday or just a family get together. The best thing about this cake is that most of the ingredients you already have on hand.

 If you can find some sugar free icing, decorating this cake would be easy. Just ice the top, you might even find some sugar free candy decorations to put on.

Diabetic Recipe

Ingredients

¾ cup margarine at room temperature

¼ cup sugar

½ cup liquid egg substitute, at room temperature

1/3 cup unsweetened cocoa powder

1/3 cup sweetener (sugar substitute)

2 tsp vanilla extract

2 cup flour, cake, white, enriched, unsifted

2 tsp baking powder

¼ cup dry nonfat/skim milk

1 cup water at room temperature

Directions


1. Preheat oven to 350 F

2. Cream the margarine and sugar together at medium speed until fluffy

3. Beat in the egg substitute, sweetener, and vanilla at medium speed for 30 seconds

4. In a separate bowl mix the flour, baking powder, dry milk and cocoa together

5. Add the dry mixture and one cup of water to the creamed mixture and mix at medium speed until smooth

6. Spread this mixture in a greased 9x9 square pan

7. Bake in oven for 30 to 35 minutes. Let cool to room temperature
