How to Make Pink Potato Cupcakes
This recipe is very easy and watching the video will help you make very delicious cupcakes.
Ingredients:
- 1cup softened butter
- 1 ½ cup sugar
- 4 eggs
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1tsp baking powder
- ½ tsp salt
- 1 ½ cup cold milk
Directions:
1. Preheat the oven to 180°C and line 24 hole muffin tin with paper liners.
2. In a mixing bowl cream butter and sugar.
3. Add eggs one at a time, beating well after each addition.
4. Add vanilla and stir well.
5. In a separate bowl, stir together all dry ingredients.
6. Add the dry ingredients to the butter mixture and mix all well.
7. Add milk and mix until well combined.
8. Spoon the mixture into the paper liners until they are half full.
9. Bake the cupcakes for about 10-15 minutes until they become golden brown on top.
10. Set aside to cool for 10 minutes then remove them from the pan and cool them completely on wired rack.
Instruction on how to make mashed potatoes frosting:
1. Peel and cut potatoes into fours.
2. Cook the potatoes in salted water for about 15-20 minutes.
3. When potatoes are cooked, remove them from the water and place them into the large bowl.
4. Add a little butter and milk, and blend the mixture together with a mixture.
Note: If necessary add more milk to achieve the creamy consistency of a frosting.
5. Add a few drops of food coloring and blend.
6. Fill the piping bags with the mashed potatoes frosting and spread it onto the cupcakes.
