For a long time I didn't know what kind of cake to make for the birthday of my son, until one evening I had a revelation. I was reading a fairy tale to him, when I saw an adorable image of a fairy house in his story book. It was a beautiful little mushroom house, with small windows and doors and green grass around.

The image was colorful and it looked so real to me. My son always loved the drawings that this particular fairy tale book had, and he was always fascinated with mushroom houses. I decided to do my best and make a birthday cake for him just like the mushroom house I saw in the story book.
I haven't told him because I wanted it to be a surprise: little kids love that. The next day I went shopping for ingredients. Usually there is a recipe I use for all kinds of cakes to make the dough, a recipe that I have tried many times before. I always bake this and then add different kinds of fillings and use various types of decorations.
I went to the local grocery store and I bought flour, oil, sugar, eggs, baking powder, vanilla sugar, lemons and milk for the dough, whipped cream and chocolate for the filling, marzipan and food colorings for the decoration. I made the cake on the morning of the birthday so it can be fresh, but I also wanted to make sure that there will be enough time for it to sit on the fridge for a while.
Last year it was the 3rd birthday of my son. This was a big thing for the whole family: we have celebrated his two birthdays before, but this was the first time he actually understood what was going on. Because of this the whole family was in a big preparation: we invited some other kids and friends of ours, bought some lovely birthday decorations and explained to him what a birthday really meant. I spent the longest time figuring out a birthday cake for him. I wanted to make something special, something that he will love and never forget, and in the same time I also wanted to impress the guests.
The cake recipe I used is good because it will make the cake very fluffy, soft, and still consistent. I knew that it is easy to cut and I can make the desired shape of the cake fast.
Ingredients for the cake:
1. 36 spoons of flour2. 30 spoons of sugar3. 30 spoons of oil (sunflower or any other type)4. 8 eggs5. 2 baking powders6. 2 spoons of vanilla sugar7. the peel of a lemon8. about one cup of milk
Directions:
1. Mix the egg yolks with the 30 spoons of sugar (I usually don't use a mixer when I make cakes, I prefer mixing everything with my hand using a wooden spoon, but it takes less time to use a mixer)Tip: If you want to make this cake be sure that all the sugar is melted in the egg yolks: you will know that it's ready when the color changes from yellow to a soft, pastel cream color.
2. When this mixture with a sauce consistency was done, I added the 30 spoons of oil. Oil makes the cake easy to make, soft and fluffy. Tip: You can use melted butter instead of oil but the cake won't be as soft.
3. Add the baking powder, the vanilla sugar and the lemon peel.
4. Add step by step the 36 spoons of flour, adding only 2 spoonfuls at a time, mixing, and then adding more. This makes the dough more even and you won't risk getting a dough with lumps.
5. Add about one cup of milk: the milk should be enough to make the dough soft and easy to stir.
6. Beat the egg whites until they get hard, and carefully I mixed them into the rest. Tip: Do this carefully: this whipped egg white is the essential part of the cake.
7. Use a round baking tray, butter the bottom and the edges of it.
8. Pour the mixture into the tray.
9. Preheat the oven to 180 degrees and put the cake to bake.
This cake takes about 35 minutes to bake, but I always check it in every 15 minutes, and when the top starts to get golden brown, I know it is done. While the cake was baking I started to make the filling. My son loves chocolate, so I decided to make a chocolate cake. Children usually prefer chocolate cakes to fruit cakes.

1. 2 cartons of whipped cream2. a bar of dark chocolate with 75% cocoa
Directions to make the filling for the cake:
1. Melt the chocolate in the microwave oven.
2. When the chocolate melted I let it cool for a while.
3. Mix it into the whipped cream.
4. Decorating tips
When the cake was done I cut it in half and using the image in my son's book I shaped the mushroom cake. It was actually much easier than I expected. After this shape was done, I cut the whole thing into more parts, added the filling, and then used the filling to stick everything together. It was perfect. I only needed to color the cake with the food coloring, and I made a chimney and doors using colorful marzipan. For the food colorings I used a brush made for this purpose: it was very easy to color the cake this way. I used red, white, purple and green colors, but if you decide to make this cake you can use any colors you like.
My son absolutely loved the cake and so did the guests. It had a great taste, the filling was just perfect, with a great combination of the tender taste of whipped cream and the stronger taste of chocolate. I think this cake is perfect for adults and kids as well, not only because it has a fun form, but also because of its taste. The guests liked it so much that I decided to share this recipe with more people.
