Free Easy Recipe for Sweedish Coffehouse fruit Cake

This is a large, juicy cake which is often served at coffeehouses and bakeries in Sweden. You won't need any baking powder since it contains so many eggs.
Ingredients
15 oz canned peaches or pears
7 oz margarine or butter
1 cup sugar
5 eggs
1 3/4 cups flour
2 tsp ground cinnamon
Method
Grease and flour a round or square cake pan, capacity about 8 cups, or a small roasting pan, 8 x 12". Heat the oven to 350F.
Drain the fruit well, then cut in thin slices or wedges. Stir fat and sugar until fluffy. Stir in the eggs, one by one, and blend well between each. Add flour.
Pour about 1/3 of the batter in the dish and spread out evenly. Divide the fruit on top and sprinkle with cinnamon. Then pour on remaining batter. Put the dish on a rack in the lower part of the oven and bake for about 1 hour if you use a round dish, a little shorter if you use a roasting pan. Check for "readiness". Let the cake cool in the dish or pan. It keeps in a cool place, covered with plastic or aluminum foil, for 3 - 4 days. In the freezer it keeps for about 6 months.
This cake is lovely if you serve it as a dessert with half-melted ice cream or whipped cream.

About castle wedding cakes
If you want the bride to feel like a fairy princess or like Cinderella then a wedding cake shaped like a castle is just the thing. These cakes can be grand looking and very ornate and you can decorate them with decorations and fancy icing, and maybe a little carriage on top that hold the bride and groom topper.

Sift flour and baking powder together and set aside.

Triple Chocolate Fudge Cake With Hazelnuts
Ingredients:
½ cup water (125ml)
2 oz unsweetened cocoa powder (55g)
3 squares semi
sweet chocolate
½ cup butter (125ml)
2/3 cup milk (165ml)
1 1/5 cup flour (300ml)
1 tblsp baking powder (15ml)
½ tsp salt (2.5ml)
4 jumbo eggs
8½ oz caster sugar (240g)
2 tsp vanilla (10ml)
Fudge Filling:
5 oz caster sugar (140g)
3/5 cup cream (fresh) (150ml)
7 oz dark chocolate (195g)
½ cup butter (125ml)
18 oz confectioners sugar (500g)
2 tblsp hazelnut liqueur(30ml)
Ganache:
11 oz dark chocolate (chopped). (310g)
½ cup cream (fresh) (125ml)
3 tblsp butter (45ml)
Method:
Preheat oven to 350°F (180°C)
Grease and line two 9" round pans.
Mix the water and cocoa to a smooth paste.
Heat the chocolate, butter and milk till the butter and chocolate are melted. Do not boil.
Add the cocoa mixture to the milk mixture, and set aside to cool down.
Sift together the flour, baking powder and salt.
Beat the eggs till light. Gradually add the sugar, while beating continuously, till the sugar is completely dissolved.
Add the vanilla, and mix through.
With a metal spoon, fold in the dry ingredients, alternating with the cocoa mixture, into the egg mixture. Be gentle!
Pour equal amounts of the batter into the tins, and bake 30-40 minutes.
Allow the cakes to cool a while in the tins. Turn them out onto a wire rack to cool completely.
Fudge Filling:
Combine the sugar and cream in a heavy-bottomed saucepan.
Stir over a low heat, to dissolve the sugar completely.
allow the mixture to boil for 6 minutes without stirring. (If stirring is needed to prevent it from boiling over, stir the minimum, rather lower the heat, just to keep it boiling)(265°(125°C) on a sugar thermometer)
Remove from the heat and stir in the chocolate until melted.
Add 2/3 of the butter and mix well.
At this point you can assess the icing. You can add some of the confectioner's sugar, or all of it, and the butter. Use a n electric beater to beat the mixture till smooth and light.
Add the liqueur, and mix through.
Work quickly, before the fudge sets, and sandwich the two cake layers with ½ the fudge in the middle, and the other ½ on top.
Ganache:
Heat the cream in a saucepan to almost boiling point. Add the chocolate and butter, and stir till all is melted. Be careful not to over heat.
Cool down, and add the liqueur. Mix well. Leave until thick enough to spread easily.
In the mean time, roast and skin the hazelnuts, and add to the ganache.
Pour the ganache over the cake, allowing it to drip from the sides.
I sometimes use shavings of white chocolate to garnish the cake.

Chocolate-Covered Cherry Cake
Ingredients
1 stick sweet butter, softened
1-1/2 cups sugar
4 eggs, separated
2 cups all-purpose flour
2 tsp. baking powder
1 cup milk
1 cup chopped walnuts
1 cup chopped maraschino cherries (reserve juice for frosting)
Chocolate cherry frosting
1 stick sweet butter
3 Tbsp. cocoa
6 Tbsp. cherry juice
1 tsp. pure vanilla extract
1 16-oz box confectioner's sugar
Preheat oven at 350º. Grease and lightly flour 9x13 inch baking pan.
In large mixing bowl, cream together butter and sugar. Add the egg yolks one at a time, beating well after each addition.
Combine flour and baking powder in a small bowl. Stir to mix. Add to creamed mixture alternately with milk, starting and ending with flour mixture. Stir in walnuts and cherries.
Beat egg whites until stiff but not dry. Fold into batter. Pour into pan.
Bake for 45 minutes.
While cake is baking, make frosting. Combine butter, cocoa and cherry juice in a medium saucepan. Cook over medium heat until butter melts and the mixture is smooth. Remove from heat. Stir in van extract. Add confectioner's sugar. BEAT UNTIL SMOOTH.
Pour immediately over warm cake and smooth with spatula.
Note: Cool completely before slicing. If not the cake will fall apart.

How To Make Fondant Bows
I am assuming you are trying to make a bow that looks like how you would tie your shoe, with two loops and two tails? If this is correct them you need to make it from strips. I use gum paste fondant. I like to get all the dough even so I put it through my pasta machine
Wilton has a new measure and cut mat out with circles and squares to help you measure. I use that it may be expensive but it saves a lot of time
If you want the to be four inches in length and two inches wide you need a strip double that length. Cut out two lengths 8 inches in length, 2 inches wide. I then hang them out to dry, I have a special clothes dryer for pasta and I use that, but you can hang them from a wooden spoon over a deep kitchen drawer. Wet the edges a little and I mean a little, water is death to this, and pinch the ends equally together between you’re your thumb and the first two fingers(if you don’t know what I mean snap your fingers, and it is this I mean). I then leave them to dry for twenty-four hours.
Next day brush with a little pearl brush for that extra sparkly look. Set out a piece of waxed paper and get some royal icing for glue. Place the bottom row of loops on the paper with some on their side and some flat. Add more "glue" to the top of the ends and then add another layer. Keep adding layers using the same principal you can build it up to be about four inches deep and have about twenty loops. Leave to dry fro twenty four hours and then place on top of the cake.

Gooey Chocolate and Caramel Icing
The yummiest chocolate icing ever. However it does remain gooey so it is better as a glaze
Ingredients
1 (14 ounce) can sweetened condensed milk
1 tablespoon water
1/8 teaspoon salt
2 (1 ounce) squares unsweetened chocolate
squirt of caramel ice cream topping
1/2 teaspoon vanilla extract
Directions
1 In a double boiler, combine milk, water, salt, caramel and chocolate. Heat, stirring constantly until thick. Remove from heat and allow to cool. Add vanilla.
2 Spread or drizzle over your cake.

Resources to get the most out of wedding cake pictures
If you do a web search for wedding cake photos you will get so many links that you could still be looking 50 years from now. It is possible you will find a cake in time for your silver anniversary. We do have a few ideas that can help use resources other than the internet to look for cake ideas.
Local Wedding Photographers
Every wedding photographer takes pictures of the cake and cake cutting ceremony. They should be happy to show you, especially if you let them know you are also shopping for a photographer. You can find photographers in the yellow pages.
Local Bakeries
Every baker that makes wedding cakes should have a portfolio of wedding cakes they have made. You may find your cake there. Don’t be afraid to ask if they can take elements from two or more cakes to create a wedding cake that is uniquely yours. Even if you are planning to make your own cake this may give you some ideas.
Libraries
If you want to make your own cake, libraries will have cookbooks that you can use to find a recipe. They will also likely have wedding planning books that will probably have cake pictures. If your library has a magazine section check for bridal magazines, they usually have wedding cake pictures.
Many libraries have local directories which should list wedding planners, photographers, bakers, hotels and caterers, all of which should have pictures of their work.
Hotels
Many hotels cater wedding receptions, ask the receptionist or banquet manager who they think is the best baker in the area is. The hotel may even have their own baker. If so, ask to see examples of their work. These people as well as bakeries and photographers, all deal with real cakes and should know the best bakers.
Book Stores
Take a look at wedding planning books, and bridal magazines for pictures of wedding cakes you might be interested in.

A party supply store would be the best place to start. Even if they don't have "wedding theme" cupcake liners, they should have something like gold or silver.
Best bet, just use white with appropriate decorations. It would be nice to find a bride and groom standing next to each other littered all over the paper, but it just isn't out there.
It's a bit too tacky for a wedding and I'm sure if anyone tried making them, they didn't sell at all.

Chocolate Raspberry Surprise Cake
Ingredients
For Cake:
1 tablespoon soft unsalted butter
Several tablespoons flour
4 "large" eggs
1 cup granulated sugar
3/4 cup plain bleached cake flour, in a sifter
12 ounces top-quality semisweet chocolate
(5 ounces for filling, 7 ounces for coating)
1 cup chilled heavy cream
1 cup fresh-squeezed orange juice
3 tablespoons Grand Marnier or orange liqueur (optional)
1 pint fresh red raspberries
For Decoration:
The remaining melted chocolate from above
6 to 8 fresh green leaves--orange, lemon, or bay
1 tablespoon cocoa powder in a very fine mesh sieve
2 cups raspberry sauce
For Raspberry Sauce:1 1/2 cups fresh raspberries
1/2 cup or more granulated sugar
2 tablespoons fresh lemon juice
Method
Preparing the Génoise Sponge Cake:
Using the brush, generously butter the 4-cup stainless bowl. Sprinkle in several tablespoons of flour and rotate the bowl in all directions to coat entire inner surface. Turn the bowl upside down and knock out excess flour. Preheat the oven to 350 F.
The Cake Batter:
Beat the eggs and sugar in mixer bowl for 5 minutes, until thick, fluffy, and tripled in volume. Sift and rapidly fold in the flour with a big rubber spatula, and scoop the batter into the prepared bowl. Bake in the middle level of the preheated 350 F oven for 35 to 45 minutes. It is done when a toothpick, stuck through the center of the cake, comes out clean. Completely cool the cake on a rack--at least 1 hour.
Chocolate mousse cakes are deliciously rich desserts, a true chocolate lovers delight. These cakes have no flour, the batter is made from egg whites, sugar finely ground hazelnuts, and unsweetened chocolate. The filling uses the egg yolks dark bitter or semi-sweet chocolate, sugar and whipping cream. You bake the “cake” first and let cool. Then the filling is mixed and poured over the cake. Refrigerate it for several hours. The cake is served cold. It will look more like a trifle than a mousse. If you do a web search for “chocolate mousse cake” you will find many recipes, most will have similar ingredients. You won’t need any special supplies to make this cake other than your regular baking supplies.There are a few different ways of decorating these cakes. You can make chocolate panels to cover the cake, use piped mousse, or chocolate dipped fruit on your chocolate mousse cakes.
Recipe:
Bring 2 inches of water to a simmer in the 8-inch saucepan, set the bowl over it, add 5 ounces of chocolate, and remove from heat. When completely melted and smooth, remove the bowl from over the water and let cool to room temperature. Whip cream to soft peaks in bowl set over a larger bowl of ice cubes and water. Remove bowl from ice/water and fold half of whipped cream into cooled but liquid chocolate; when incorporated, fold in remaining cream.
Assembling the Cake:
Taste orange juice, adding a little sugar if needed. If you wish, add 2 tablespoons of Grand Marnier or orange liqueur. Use a serrated knife to slice the Génoise horizontally into three layers of equal thickness. Shave off and discard the crusty top of the cake. Line the same 8-inch baking bowl with a piece of plastic wrap. Fit rounded top piece of cake into lined bowl. Using pastry brush, soak cake with about 4 tablespoons of orange juice mixture. Spoon 1/3 of the chocolate cream mixture onto the soaked cake layer, and strew on a small handful of raspberries. Place next layer of cake onto the first, brush with 1/3 cup of orange juice mixture, spoon on remaining mousse and a handful of raspberries, and cover with the final slice of cake. Brush on the remaining juice, and bring the hanging edges of the plastic wrap over the top. Cover with another sheet of plastic, and refrigerate for several hours before decorating. Note: Cake may be assembled to this point a day in advance.
Making Chocolate Icing:
Melt remaining 7 ounces of chocolate in a bowl set over warm water, using the same technique as for the mousse. Remove plastic covering from cake bowl and fold back the plastic that is covering the cake. Unmold the thoroughly chilled cake, domed side up, onto a rack. Peel off and discard remaining plastic covering. Lightly dampen your work surface so that a sheet of plastic wrap will adhere, and lay out a 12-inch sheet. Using a rubber spatula, spread a thin 10- to 11-inch disk of cool liquid chocolate in the center of the sheet. Rapidly slide plastic over the top of bowl, letting the plastic with its chocolate disk cover the bottom and sides of the bowl. Gently drop chilled cake, domed side down, into bowl, fold the plastic wrap over it, and refrigerate.
The Chocolate Leaves:
Dip the inside of each leaf into the remaining melted chocolate. Place on a plate, coated side up. Refrigerate until the chocolate hardens.
The Raspberry Sauce:
Puree the raspberries with 1/2 cup sugar in a blender or processor. Add the lemon juice, taste, and adjust the flavor if necessary. Push sauce through fine sieve. Cover and refrigerate until served.
Decorating the Cake:
Remove cake from refrigerator and again fold back the plastic wrap. Turn the cake domed side up onto a serving platter and lift off the plastic to reveal a beautifully smooth, shiny chocolate surface. Sprinkle with a dusting of cocoa powder. Make a ring of raspberries around the edge of the cake and pour a little raspberry sauce over them. Remove chocolate leaves from the refrigerator. Gently separate the green leaves from the chocolate ones, then one by one dip the stem of each into melted chocolate and gently affix it near the center of the cake, making an upstanding bouquet of 4 or 5 leaves. Decorate with a few strategically placed raspberries.
Serve with a handful of raspberries covered with a spoonful of raspberry sauce.

Free Easy Recipe for Peanut Butter Icing
This is great for chocolate cakes and if you do not have peanut butter you can ground some monkey nuts with vegetable oil, for a few seconds to get a crunchy peanut butter and a bit longer for smooth
PEANUT BUTTER ICING
Ingredients:
½ cup peanut butter
½ cup butter
1 cup sugar
1 teaspoon pure vanilla
1 cup milk
2 tablespoons cornstarch
Directions:
Combine hte milk and cornflour and then heat to boiling and cool .
Whip the sugar, butter, peanut butter and vanilla with a mixer. Start out on low speed and then increase to high. Whip at least 15 minutes. Add cooled mixture and whip for a few minutes more until you do not feel the sugar when tasting. The texture should be smooth and creamy.

How do I stop the colour bleeding through when I cover a chocolate mud wedding cake with white royal icing?

Banana Butter Frosting - Great for Cupcakes
Banana Butter Frosting
Don't let the titile put you off this is is gorgeuos with chocolate cupcakes, and it has not got an over risding tasts of bananas.
Ingredients
1-2 fully ripe, yellow with brown flecks bananas
1/2 teaspoon lemon juice
1/4 cup butter, softenend
3 1/2 cups sifted confectioners' sugar
Method
Mix together bananas and lemon juice.
Beat butter in mixing bowl until creamy.
Add sugar and bananas alternately, a small amount at a time.
Beat until frosting is light and fluffy.

Free Easy Vegan Carrot Cake
Incredible Vegan Carrot Cake
Ingredients
2-1/4 cups all purpose flour
2 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon pumpkin pie spice or allspice
1 teaspoon baking powder
1 teaspoon salt
3/4 cup light brown cane sugar
3/4 cup cane sugar
3 egg equivalent in Ener-G egg substitute
1 teaspoon vanilla
1 cup vegetable oil
2 cups finely grated carrots
1 can (about 14 oz) crushe'd pineapple, drained
1 cup shredded coconut
nuts and raisins optional
Directions:
Preheat oven to 350°. In a medium bowl, mix flour, baking soda, cinnamon, spice, baking powder, and salt. In a large bowl, mix sugar and eggs until creamy (works best with an electric mixer) - add vanilla, then add vegetable oil. Mix wet and dry ingredients together and add carrots, pineapple, and coconut.
I prefer a thicker cake, so I used a 9x9 glass pan. But if you prefer thinner cake with more servings, use a 13x9. Grease pan. Smooth batter into pan. Bake for 40 - 45 minutes or until toothpick comes out clean. Be sure to let the cake adequately cool before frosting.
Faux Cream Cheese Frosting recipe
1 package vegan cream cheese 1/3 cup vegan soy margarine (like Earth Balance), softened. 1 tsp. vanilla and 2 cups vegan confectioners sugar
With an electric mixer, beat cream cheese and margarine. Add vanilla, then add sugar.
Serves: 9
Preparation time: 20 minutes

White chocolate heart I make a cut out of paper hearts and then melt the chocolate and pour on the paper and peel off the paper when dry
Pipe a dark choccolate icing on the bottom and then a darker cinfg and the cake is done.

Unique St Valentines Heart Chocolate Cake

Chocolate dot Valentine cake for my husband.
We all know that Valentine is a special day in almost everyone's life and that we all like to give something to persons we care about.
I made this cake for Valentine in order to surprise my husband. And I surely did.
It looked very nice and tasted even better. He likes chocolate cakes so I made such cake and he was delighted with its look as well as its taste.
For this cake I baked two chocolate layers and made chocolate butter cream for frosting. In order to make chocolate layer I used eggs, sugar, vanilla extract, butter, ground walnuts, cocoa powder, and chocolate.
First, I mixed butter with sugar and vanilla extract with a mixer. Then, I added egg yolks one at a time, and beat all well until combined. Then, I added cocoa powder and melted chocolate and at the end I added ground walnuts. In other bowl, I beat egg whites and slowly added to the previous mixture.
I poured it into the prepared heart shaped pan and baked two layers in the preheated oven for 10 min. at high heat and 15-20 min. more at lower heat. Took it out of the oven and let it to cool completely. While the layers were cooling I made chocolate frosting. First, I beat butter with powdered sugar and vanilla, added egg yolks, cocoa powder and melted chocolate. I beat egg whites separately and added to the mixture.
I put mixed cream into the fridge to cool and then frosted it between the layers. At the end I used white fondant to cover the cake and on top of the cake I put brown dots bigger and smaller which I made out of modeling chocolate. It really looked cute and it was the perfect present for my husband for Valentine.
