Ingredients

For the cake:
6 oz (175 g) dark chocolate (65 percent per cent cocoa solids)
4 oz (110 g) soft butter
4 oz (110 g) caster sugar4 large egg yolks, lightly beaten
1/2 teaspoon vanilla extract
4 oz (110 g) plain flour
1/2 teaspoon baking powder
5 large egg whites


For the icing:
6 oz (175 g) dark chocolate lindt is wonderful
5 fl oz (150 ml) double cream
2 teaspoons glycerine
2 teaspoons smooth apricot jam



Pre-heat the oven to gas mark 2, 300°F (150°C).

You will also need an 8 inch (20 cm) springform cake tin, lightly greased and the base lined with baking parchment.


Method

Break the chocolate into a heatproof bowl, then place the bowl over a saucepan of barely simmering water and leave it to melt slowly, being careful not to let the bottom of the bowl touch the water or the chocolate will overheat, and go hard and lumpy.

Cream the butter and sugar until very pale and fluffy. Now beat in the egg yolks, a little at a time, whisking well after each addition.Then, when the chocolate has cooled slightly, fold it gradually into the creamed butter mixture and then add the vanilla extract.

Next, sift the flour and baking powder together into a bowl, then put it all back into the sieve and sift it into the mixture a little at a time, carefully folding it in with a large metal spoon.

Next, in a large, clean bowl, whisk the egg whites to the stiff-peak stage, which will take 3-4 minutes, and then carefully fold them into the mixture, bit by bit, still using a metal spoon. Now pour the mixture into the prepared cake tin, level the top and bake it on the middle shelf of the oven for about 1 hour, or until firm and well risen. When it’s cooked, allow the cake to cool in the tin for 10 minutes before turning it out on to a cooling rack. Then leave it to get quite cold.

Now warm the apricot jam and GLAZE the cake all over with it. Next, to make the icing, melt the chocolate with the cream, again in a bowl over simmering water. Then remove the bowl from the heat, and stir in the glycerine, to give a coating consistency. Pour the icing over the whole cake, making sure it covers the top and the sides completely. Then leave it to set, which will take 2-3 hours.

I know everyone says to keep the top layer of your wedding cake in the freezer to eat on your one year anniversary and I'd have to say that the only way I would eat one year old cake is if my marriage was awful and I wanted to kill myself, or my husband. You can keep in the freezer for a year if you really want to but keep in mind, there are almost no frozen foods that if kept for a year would be good. Why would you do it with cake?


5. If the cake portion of your wedding cake is made using the traditional fruitcake dough, then it can last up to 30 days unrefrigerated, and up to 3 years in a refrigerator or even longer in a freezer (if packaged correctly).

If your cake is NOT fruitcake-based, then the cake may taste stale if kept in the freezer longer than a year, or may pick up that musty ice flavor.

Many wedding cakes are also coated with a candied icing known as marzipan. This also has a long shelf-life as its main ingredients are almond paste and sugar.

A large cake can take a long time to make, and without modern refrigeration, a heavy fat and sugar frosting may have prevented spoilage by limiting moisture exposure. Another possibility is the use of sugar and fat required satisfying the need for conspicuous consumption for the families involved in the wedding.

The tiered design of the wedding cake originates from the tiered spire of a well known medieval church in London, England, called St Bride's.

Henry VIII of England enacted a law specifying the quantity of sugar a cake may have, possibly to control or tax this prevailing convention.

During World War II, sugar was rationed in Great Britain, so icing could not be made, and cakes were reduced in size. To overcome this cakes were often served inside a box, which had been decorated with plaster of Paris, to resemble a larger, traditional cake.

Fruitcake is a cake made of dried fruits and optionally candied fruit, spices and nuts that may be soaked in brandy or rum, the richest versions (possibly iced) often being used in the celebration of weddings

Grandma Pearls Wedding Cake

1 Lb granulated sugar
1/2 Lb confectionary sugar
10 egg yolks
5 egg whites
1/4 Lb raisins
1/4 Lb currants
1/4 Lb plums
1/4 Lb ginger preserve
1/4 chow-chow preserve
1/4 pumpkin preserve
1/4 cherries
1/4 mixed candied peel
1/2 Lb cashew nuts
1/2 Lb butter
4 tablespoon strawberry jam or preserve
1 wine glass brandy
1 wine glass bee honey
2 Oz rulan ( roasted with 1tsp butter)
2 teaspoon each of vanilla and Almond extract
1/4 teaspoon each of cinnamon, cardamoms ,cloves (powdered)
1/2 teaspoon nutmeg (powdered)
2 teaspoon of rose-water

1. First prepare the fruit. Cut all the fruit and preserve to very small pieces. Chop cashew very final and add to fruit mix. Put the mixture into a large bowl. Add brandy, bee honey, strawberry jam mix well. Cover with plastic rap put it cool place 2 to 3 days.

2. Then add all the extract and powdered cinnamon, cardamoms, cloves, and nutmeg. Cover tight and put it in cool place another two days.

3. Now get ready to bake the cake. Preheat oven 300 . Grease 10"x15" metal pan. Line bottom and sides with shapely cut news paper ( about 5 layers ). Then Line with greased parchment paper or waxed paper.

4. Put granulated sugar and confectionary sugar in a large bowl. Add room temperature butter and beat well. Add rulang mix few more minute . Add yolk of eggs beat well. Mix the fruit mixture with wooden spatula. Beat egg whites until stiff forth and fold into the mixture.
Add 2 teaspoon ful rose-water and spoon the mixture into the prepared pan bake 3 to 4 hours until top begins to brown. Care fully check wether the bottom of the cake could burn

Square wedding cake pictures have always been a fantasy of mine. Since I was a child I always had fantasies about my wedding cake. And now, I can really say that square wedding cake pictures are my specialty. Every time a friend of mine gets married they ask for my help in choosing a wedding cake and taking their square wedding cake pictures at the reception.

Most of the traditional wedding cakes are either square or round white cakes, frosted in ivory or white frosting. Sheet Cake Wedding Cake?


Question:

How does it look to have 2 tiers of cake with a sheet cake? to save on cost (wedding cake)?
The bakery said to save on cost, they can make cake to feed 20 people then for the rest of 30 of them- have a sheet cake... but how do they do it? do they make their cake- and then put the sheet cake underneath so it all looks like together? or do they feed the 20 people, then go get a sheet cake- and serve that up??

How to Bake a Wedding Cake


Question:

My mother is trying to make my wedding cake for me. She is taking a standard cake recipe and trying to make an 8", 10" and 12" cake for the wedding. Last night she made the 12" and, while the cake tasted no different, the consistency was different. It was denser and darker. Also, she said she experienced the following: she tried to cook it under the same temperature as her standard 8" or 9" and when checking on it saw that it had risen greatly and pulled away from the sides....later it flattened but with a hole in the center....after that it cracked severely.


Can anyone give me any help on how to cook a red velvet wedding cake?

Red velvet cake is very hard to make for an amateur baker. RVC is very rich and can crak easily. I suggest for you to avoid headaches and buy something at the store, Walmart have pretty affordable wedding cakes.

If the consistency was different, it could have been for these reasons:

1- The batter was mixed differently, Because RVC is so rich, it's very important for all the ingredients to be mixed thoughly and evenly. Follow the recipe intructions carefully as see what ingredients to fold first; believe it or nor, the order in which the ingredients are incorporated are very important. Also, follow the instructions carefully on how long the batter should be mixed, otherwise, gluten can be formed and the consistency would be different.

2. The pan. If you have a 8' pan, the cooking time would be different from a 12" pan. Call the cake mix manufacturer or check the box for the appropiate cooking times.

3. Did she use more mix for the 12" pan? Proportions need to be perfect, otherwise, the batter would be uneven, and you are in danger to overcook it or crack it. Call the cake mix manufacturer for instructions on how many ingredients would you need for a 12" pan. Mixing half of a box is a very BAD idea, it never turns out right.

I know that your mom means well, but this cake is very important, if it turns out bad, it could be frustating for every one and you don't need that on your wedding day.

First, red velvet is the trickiest cake to make, for exactly those reasons. There are professional bakers who refuse to do it because the outcome is pretty hit-and-miss.

Second, does your mom know how to decorate a wedding cake? Baking it is the easiest part; decorating it is hard. A friend of mine, who is a chef, baked another friend's cake. It tasted great, but it looked horrible because all she'd ever decorated before was regular birthday cakes.

First, congrats on your wedding! I used to bake wedding cakes and can tell you how hard it can be! I can't imagine what it would be like to try one at home!

Here is some troubleshooting advice for your cakes:

1. The size and heaviness pans matter. If the pans are large or thin, then dampen a dish towel and fold them over and over until they look like a rope and "pin" them around the outside of your pan. It sounds like what happened was that the outer edges were done cooking before the center. This allows that edges to cook more gently so the center can keep up with them.

2. Make sure that your oven is at the correct temperature (meaning that if you are baking something at 350*, then make sure your oven isn't at 325* or 375*)- this can cause a lot of trouble for any cake, but can lead to huge problems with larger cakes because of their structure.

3. If the entire cake was dry, you could have too much leavening in the cake. Without seeing the recipe I couldn't tell you if this is true or not.

4. I suspect that there might have not been enough batter in the pan. The batter should fill the pan from one-half to two-thirds full (cakes that get most of their leavening from the aeration in the batter should get more batter in the pan, I suspect that your red velvet recipe would be closer to 1/2 full) . To estimate the amount of batter that you need, fill the pan to the level that it requires with water and measure the amount of water it took and then make your volume of cake batter to match.

Try Shirley O. Corriher's "Cookwise" for recipe trouble shooting. However, your best bet would be to look at Rose Levy Beranbaum's "The Cake Bible." Her recipes are great and she has an entire section devoted to making large and special occasion cakes (at home). If you get a in a real pinch, you could use one of her other recipes to make your 12'' bottom layer and use your mother's recipe for the top layers.

Using multiple cake flavors for every layer is very common these days and no one would know the difference.

P.S. If your mother is using a mix, they are not intended to be made into large layers (there just isn't enough structure in the resulting cake for a large layer). She should try to find a commercial mix instead (try finding a GFS store). They are usually "just add water" mixes, but make very reliable, well structured cakes.

Sounds like a lot, I know, but it's three good size layers, a small topper layer on the side for us to freeze for the first anniversary, and they deliver it to our site and set it up for us...no worries about a ruined cake on the big day when I am going to be busy with everything else!

Plus it tastes sooooooo great!!!

Go to a bakery and ask for lots of samples...take your fiance with you because this is one part of the planning that he will LOVE to be a part of, LOL! ;-)

Wal-Mart cakes are pretty good.
They should be able to give you a sample if you ask, and they seemed to be reasonably priced the last time I looked.
Any bakery will let you sample the cakes, but a private bakery is going to be more expensive than Wal-Mart.
What about making it yourself? If you have a "Michael's" or a cake decorating store, in your area you can learn cake decorating from them, they have all of the supplies you will need, and you can make cakes for other people later.
If you know of someone that makes them, that would actually be the cheapest way to go.
I made a 3 tier cake for my parents 50th anniversary and it cost less than $100.00. That was 3 years ago.

Average cost starts about a $150 and up. Walmart here makes beautiful cakes, and they tasted awesome. Unfortunately not all Walmart's decorators are as well trained as the ones here. Do some price shopping, and go check out the decorator at Walmart. Visit some bakeries and see what they have to offer.

Prices are based on size, difficutly, time, and what you what on it and in it. So, if you want some kind of a decoration that takes a lot of time then expect to pay more. If you want a cake decorated with fresh or silk flowers, and you do the placing and buying the flowers you pay less.

If you are having a lot of food at the reception, you don't have to have a huge cake. Remember the top layer is for you and your husband to have one your first anniversay. Some couples are opting out of traditional cakes, my friend had a twinkies covered with strawberries, another used cupcakes, my daughter had a basketweaved cake with fresh flowers decorating it(carrot cake too, yuck but that's what they wanted).


So, don't limit yourself, do some shopping around, most bakeries welcome young couples to come in a browse and to see what lovely creative things they can do! Wedding Cake Flavors - Advice 3


I think it's a great idea to have more than one flavor! There were 3 layers in each tier of my wedding cake. I chose Almond batter, with Raspberry batter in the middle layer, so when you cut into it, it looked like white cake with a pink stripe in the middle. It was neat since my wedding colors were pink. I even had multiple filling flavors so the final cake tier looked like this its in layers:

ALMOND BATTER (white)
white chocolate mousse filling
RASPBERRY BATTER (pink)
milk chocolate mousse filling
ALMOND BATTER (white)

It was delicious! And it went over with the guests really well.

I work at a reception hall and help cut the cake, and there is always more than one flavor. Going with more than one gives the guests a choice. They seem to like that.

We had the reception folks cut the cake into serving pieces while guests were eating dinner. Then the cake was passed out as dessert. The leftovers were wrapped up and put on a table close to the door. Guests either ate the piece they got, or they traded with someone else at the table. If they wanted another piece as they were leaving, they just picked up one they wanted.

We avoided confusion by not giving guests a choice as to what flavor they wanted. They were handed a piece of cake, and either they liked it or they didn't. This seemed fair to me, since they wouldn't have a choice either if all the cake were the same flavor.

However, if you only like one flavor, there is absolutely nothing wrong with that. But if you want more than one, go for it. Things will be fine!

I recommend 2 flavors for your cake, no matter how big it is. When you have more than that it lessens the amount of slices of a particular kind available to your guests and some might not get the piece they hoped for. And when you have only 1 kind of cake you will definitely have people who wont touch it for one reason or another.

Wedding Cake Flavors - Advice 2


Having multiple flavors shouldn't be confusing to the servers or the caterers as they are the professionals and know how to handle weddings. The only suggestion I have is to let the caterers know what flavor each layer is so the servers can let the guests know which flavor is on their trays. We don't want anyone who has allergies to get a piece of cake they shouldn't have. The caterers should place each flavor on one tray so the servers will know exactly what flavor they have. It's not like they will have all four flavors on one tray. That way there is no confusion. I say go for it.:)

Wedding Cake Flavor Advice - One Flavor or More?


Initially I thought it would be fun to have more than one flavor combo for each tier of my 4 tier wedding cake. Then, after talking to the baker it occured to me that maybe that's too complicated. The baker is happy to do what we want, but how do you pass out cake that offers multiple flavors & fillings and get it all straight! To me it seems like we (the bride & groom) should just choose what we want ... one cake flavor & filling ... and be done with it.

Doesn't having multiple flavors to choose from just create unnecessary confusion for the guests & the servers to boot? And all 4 tiers will get cut into leaving exposed, leftover cake instead of just cutting what is needed to serve the guests, right?

We are having a chocolate fountain (with dipping items), fruit, crackers & cheese for snacks after the party gets rolling into the night, so there is some variety of treats other than just the wedding cake.

Has anyone had a multiple flavor wedding cake? How did it go?

We had the reception folks cut the cake into serving pieces while guests were eating dinner. Then the cake was passed out as dessert. The leftovers were wrapped up and put on a table close to the door. Guests either ate the piece they got, or they traded with someone else at the table. If they wanted another piece as they were leaving, they just picked up one they wanted.

We avoided confusion by not giving guests a choice as to what flavor they wanted. They were handed a piece of cake, and either they liked it or they didn't. This seemed fair to me, since they wouldn't have a choice either if all the cake were the same flavor.

However, if you only like one flavor, there is absolutely nothing wrong with that. But if you want more than one, go for it. Things will be fine!

Also, know that many of the wedding cake designers have websites of their own. You can find some names there, or in specialized magazines. Once you find a great wedding cake design picture, just look at the name of the designer and then look for it. He might create a unique design for your wedding cake. And from all the wedding cake designs I would recommend the one that looked like a cupcake, with some pink chocolate roses around it, and some white chocolate figurines on top of it. This is what I would like for my wedding.

Needed

Achocolate heart shaped cake anf chocolate cake recipe you like and then baked in a heart shaped tin.


THE CAKE SUPPLIES

Chocolate cake
Melted chocolate or chocolate marzipan to cover the cake.
White chocolate heart I make a cut out of paper hearts and then melt the chocolate and pour on the paper and peel off the paper when dry

Pipe a dark choccolate icing on the bottom and then a darker cinfg and the cake is done.



Recipe:

Chocolate Carrot Cake
Super easy recipe that does not even tax me.
Ingredients
1 1/2 c Finely grated carrots
3/4 c Granulated sugar
1/2 c Canola oil
1 c Boiling water
1 1/2 c Wholewheat flour
1/2 c Unsweetened cocoa powder
1 ts Cinnamon
1 1/2 ts Baking powder
1/2 ts Salt

Pre-heat oven to 350F.
Method
In a large bowl, combine carrots, sugar & oil. Pour water over the mixture. In a separate bowl, combine the rest of the ingredients. Add to the carrot mixture & mix well. Pour into a non-stick or lightly oiled 8" square pan. Bake for 35 minutes.
